Chicken Pomodoro


Ingredients:
3 boneless skinless chicken breasts, pounded thin
1/4 c. flour
2 T. vegetable oil
1/4 c. white cooking wine
1/2 c. chicken broth
2 T. lemon juice
1/2 c. tomatoes, chopped
2 T. heavy cream
1/2 c. green onions, thinly sliced

Directions:
Season chicken with salt and pepper and coat lightly with flour.
Saute chicken in oil until brown and cooked though. Remove from pan and set aside.
Deglaze with white wine until nearly gone.
Add broth and lemon juice. Return chicken to pan and cook each side 1 minute more. Transfer chicken to plate.
Finish sauce with tomatoes, cream and green onions. Heat through. Pour sauce over chicken and serve.

Make 3-4 servings. Total time 20 minutes.

Verdict:
I like this chicken. It does have a lemony flavor but don't take that the wrong way. Blake doesn't normally like lemon flavored food but he does like this. Give it a go. Cook it with some noodles on the side and you will be set.
